Chef Jasleen Marwah

Chef Jasleen Marwah is a chef turned restaurateur, who has been celebrating and presenting Kashmiri cuisine to the world through her brand ‘Namak by Jasleen.’ She hopes to bring back delectable, vintage Kashmiri recipes for a whole new generation to experience, beyond rogan josh or dum aloo. Elaborating on the lost recipes that were once the centre of family meals and get-togethers, Marwah wants to popularise the unknown ingredients like dried haak, al hach( dried bottle gourd) warimuth dal, guchi.

Chef Jasleen known for her innovative take on Kashmiri cuisine, has just launched her first restaurant, folक, serving regional Indian eats. You can sample hearty plates like the Bihari champaran mutton curry, kokum fish fry, Sindhi kadhi, Kasauli tikki pav and even dhaba-style meals. The beverages are Indian-inspired too, such as Bohra gol paani, raw rassam and aam panna. The meals are served pre-plated with various accompaniments.
